Cloves - 2 TSP

Cinnamon stick (½) TSP

Kalonji seeds -¼ TSP

Sugar - 1 TBSP

Cooking methods

1. Chop all dried fruit and nuts.

2. Heat a saucepan with sugar and 1 TBSP of water. Stir well and let the sugar dissolve. Turn the flame to medium and let the syrup begin to bubble and change color. The syrup should ideally be dark brown, so don't be alarmed by the smell. When the syrup is dark brown, remove from the heat and add 2 tablespoons of water to keep it from hardening. Put it aside.

3 Place cloves, Kalongi seeds, cinnamon sticks and cardamom in a pan and bake over low heat until fragrant. When it is fragrant, extinguish the flame and allow it to cool. Once cooled, grind to a powder in a blender with 1 tablespoon of sugar.

4. Preheat the oven to 350 degrees F. In a bowl, beat the butter and sugar together using a hand mixer. (If using a whisk, beat for 5-8 minutes). Now add an egg to the butter mixture and beat well.

5. Whisk another egg into the mixture from the previous step.

6. Add whole wheat flour, salt, baking soda, baking powder, caramel, unsweetened cocoa powder, spice powder and dried ginger powder to the egg mixture. Stir gently.

7. Finish with chopped dried fruit and chopped nuts. Put it in the batter.

8. Butter a baking pan or cake pan. Pour in the batter and bake in a preheated oven at 350 degrees for 30-35 minutes. If you don't finish it in the allotted time, keep it in the oven a little longer.

9. When you're done, insert a toothpick into the center of the cake to check that it's cooked through. Then put it on a cooling rack and let it cool down. Just slice it with a knife.

The cake will keep for up to a week at room temperature, and it will taste better every day.
