A Delicious Vegetarian Salad Recipe


To inspire you to celebrate World Vegetarian Day, we’re excited to share one of our favorite recipes: a refreshing Mediterranean Chickpea Salad. It’s packed with nutrients, bursting with flavor, and perfect for any occasion!


Ingredients:


• 1 can (15 oz) chickpeas, drained and rinsed


• 1 cup cherry tomatoes, halved


• 1 cucumber, diced


• ½ red onion, finely chopped


• ½ bell pepper (any color), diced


• ¼ cup Kalamata olives, pitted and sliced


• ¼ cup feta cheese, crumbled (optional for vegans)


• 2 tablespoons fresh parsley, chopped


• 3 tablespoons olive oil


• 2 tablespoons lemon juice


• Salt and pepper to taste


Instructions:


1. Prepare the Veggies: Start by draining and rinsing the chickpeas. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, bell pepper, olives, and parsley.


2. Make the Dressing: In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Adjust seasoning to taste.
