Ice cream was first invented by the Chinese. Legend has it that hundreds of years ago, the Chinese people knew how to cut up the frozen river water in winter, store it in cellars, take it out in summer, mix it with mashed fruit and eat it.


Marco Polo said in his book Oriental Sightings, "In the Eastern El Dorado, the inhabitants liked to eat ice cream." The so-called milk ice is the ice cream made based on the freezing of the Yuan Dynasty people. The Yuan people mixed jam and milk into it, so that the condensed ice is like sand and mud, much softer than ice.


The ice cream we eat today was first made in 1671 with cream, sugar, and the distinctive orange blossom, and it's easy to make with just ice cubes. According to legend, the creator of the ice cream was paid a fortune by King Charles II to keep the recipe a secret. But just over a decade later, the secret recipe was leaked.


It was American Frederic who transformed ice cream from a luxury food into a common dessert. In 1806, a cargo ship from Frederick set sail for Martinique from Boston Harbor in the northeastern United States. Much to the surprise of many, most of the ship's ice had not melted by the time it reached Martinique. But Martinique has hot weather and no icehouses. He turned the ice into ice cream, which quickly sold out.


Foods that were high in fat smell better. Many flavors are dissolved only in fat, and many aromas in ice cream are dissolved in fats like cream. Scientists conducted a special study on the relationship between fat content and the taste of ice cream. In the study, they made four ice creams that were identical except for their fat content: 0.4 percent, 4 percent, 6 percent, and 9 percent. Participants consistently reported that ice cream with 6 percent and 9 percent fat tasted better than ice cream with 0.4 percent and 4 percent fat.


How to choose a good ice cream? Just check the list of ingredients on the package. If the top ingredients are animal fats such as cream or milk powder, the ice cream will give us a more original dairy flavor. On the other hand, if the top toppings are refined vegetable oils or margarine, the ice cream is low in animal fat and may contain too many trans fatty acids to be eaten in large quantities.

Coconut water 150g


Milk 150ml


Condensed milk 150ml


Amount of sugar


10g cream


Gelatin 3g


50g egg whites


Purified water 30ml


1. Soak the gelatin in pure water and melt it.


2. Put the egg whites in a bowl and beat with a whisk until frothy.


3. Put the coconut water and sugar in a pan and stir as they cook. Boil and strain through a sieve.


4. Put the cream, milk, and condensed milk in a pan and add the boiled coconut water when it is hot. Keep stirring until it comes to a boil.


5. Pour the liquid from the previous step into the egg whites, stirring well as you go. Let cool and refrigerate.


6. Pour liquid frozen to 4℃ into a hand-cranked ice cream machine to make ice cream.
